White cable carries analog audio for the left channel. It’s carried as a wave with amplitude and frequency and what not that is amplified and sent to the left speaker.
Red cable carries analog audio for the right channel. Same deal as the left speaker.
Yellow cable carries composite video. Color, Video, Blank, Sync: analog video. It first sends a brightness signal, 525 interlaced lines worth (although only 486 of them are used) as well as a blank signal so the TV can set the black level accordingly, and then on top of that a color signal, to add red, green, and blue as appropriate. S-video cable on DVD players carries the color signal separately, so the image looks sharper and there are less jagged edges and no dot crawl. Component video on DVD players carries the video as it’s encoded on the DVD player, brightness on one cable, and color on two other cables, allowing for a higher resolution and progressive scan (every line can be drawn at once, instead of only every other line being drawn on the screen for interlace, what composite video and S-video use).
